Nobu Palo Alto Names Its Chef and F&B Director Behind a Seven-Day Window

Nobu Hotel Palo Alto appointed Rahul Roy executive chef and Lance Razon director of food and beverage. Ryokan stays take one night's room and tax at booking and cancel free until 3 p.m. Pacific seven days out, and the property prints no room rate or menu price.

Two appointments over four revenue surfaces

Nobu Hotel Palo Alto appointed Rahul Roy executive chef and Lance Razon director of food and beverage. The property announced both roles in its own release, and the copy carried by Hotel Online bears a dateline of 15 September 2026.

Razon oversees Nobu restaurant, private events, in-room dining and the Lobby Lounge. Roy runs the kitchen behind all four. Each surface sells on its own terms. The restaurant sells by the seat. Private events sell by the room. In-room dining serves guests who stay in.

The published dayparts

The property's own restaurant page carries the service windows. Breakfast runs 7:00 to 11:00 a.m. daily. Lunch runs noon to 2:30 p.m. Dinner runs 5:00 to 10:00 p.m. Brunch covers Saturday and Sunday from 11:00 a.m. to 2:00 p.m., and afternoon tea runs noon to 3:30 p.m. on those two days.

Tanoshi Hour holds 3:00 to 5:00 p.m. daily at the lobby bar. The sushi bar seats a limited number and hosts a six-course omakase lunch.

The terms inside the Ryokan rate

The Ryokan floors carry their own booking terms. The property requires one night's room and tax at the time of booking. A guest may cancel until 3:00 p.m. Pacific seven days before arrival.

A Ryokan stay includes daily breakfast for two, a private bar with snacks and non-alcoholic beverages, and priority seating in Nobu restaurant.

Taste of Nobu bundles a chef's choice omakase tasting menu, daily breakfast and a welcome amenity of edamame and a carafe of sake. The offer carries a two-night minimum stay.

The property bases its rates on two adults a room. Each additional adult pays $20 a night plus tax, and children under 12 stay free with an accompanying adult.

The numbers the property does not print

The release states no menu price. The property publishes no Tanoshi Hour price, no omakase price, no private dining minimum, no group minimum and no room rate.

It does publish its room sizes. Deluxe rooms run 320 square feet, the Nobu Suite 436 square feet, Ryokan suites from 337 square feet and the Ryokan Zen Suite 470 square feet. The hotel holds 73 keys across 64 guest rooms and nine suites in eight stories.

Check-in begins at 4:00 p.m. and check-out at noon. Valet parking costs $55 a day.

The distribution the release names

The release sends reservations to the property's own booking page and to its Instagram account. That page carries 11 offers, among them Ryokan Reset, Be Well With Nobu, Suite Experiences, Longevity by Nobu, Explore With Nobu, Nobu Family, Stay Longer, Drive to Us, Love Nobu, Taste of Nobu and Advance Purchase.

The brand lists three dining outlets on the property page: Nobu Palo Alto, The Cafe at the Lobby Bar and the Nobu Lobby Bar. It names Watercourse Way Bath House Spa in downtown Palo Alto as its spa partner.

The people in the roles

Roy spent nearly four years as sous chef at the property before moving to Marriott Hotels in Fremont, California as executive chef. He returns for a second chapter. His earlier roles include The Westin Savannah Harbor Golf Resort and Spa and Four Points by Sheraton in Mumbai.

Razon brings more than 15 years of Bay Area experience. He joined from the Beacon Grand in San Francisco, where he was director of food and beverage, after a spell as director of outlets at the Fairmont San Francisco. His earlier roles include Rosewood Sand Hill, Sofitel San Francisco Bay, The Westin St. Francis and the DoubleTree by Hilton Berkeley.

The item is the property's own release. Its text carried a 15 September dateline that post-dates its first appearances on trade outlets by eight days, and the record places Roy's start in the role on 1 May 2026.
