The Seniority Mix on the Floor
The Specialty Food Association publishes the job titles its attendees report. Its exhibit page puts 29 percent of Winter FancyFaire attendees in an owner, CEO or president role. Vice presidents, general managers and directors add 19 percent. The two bands cover 48 percent of the room.
The same page puts 63 percent of attendees as verified buyers and 90 percent as people who make or recommend purchases. Fifty-five percent work at companies with annual revenue over $5 million.
The First-Timer Bench
The show page counts more than 1,000 exhibitors and 310 first-time exhibitors. The association runs a lower-cost route into the show for that group.
Its Spark Pavilion page sells three packages: a One-Day Kiosk at $999, a Three-Day Tabletop at $1,699 and a Three-Day 5x10 Booth at $2,523. The Kiosk and the Tabletop each carry a counter-height table, two stools, three exhibitor badges and a company ID sign with a Buyer Readiness Signal. The 5x10 adds two four-foot undraped tables to the same badge and stool set.
The page states who can buy them. The options are open to any specialty food or beverage manufacturer that has never exhibited at or attended an SFA tradeshow. A business that booked exhibit space through the association in the past is not eligible. A business that took part through an Alliance Partner Pavilion in a 5x10 or an Incubator Village may book the Three-Day 5x10 booth. A Tier 2 SFA membership and product qualification are required, and membership can be obtained during the booking process.
Participation at each level is limited to two SFA tradeshows in total. After that, the business moves to the next level.
Three Program Rows That Carry the Trade
The schedule page sets three rows around the floor. The Broker Breakfast runs Monday 18 January from 9 a.m. to 9:30 a.m. and is listed as invite only. The Guilde des Fromagers Ceremony runs the same afternoon from 3:15 p.m. to 4:15 p.m. at the Pathfinder Stage, Booth 3548. Maker Prep Day 1 runs on the Saturday before the doors open, 16 January, from 1 p.m. to 4 p.m., with pre-registration required.
A fourth row sits on the same Saturday. The Specialty Food Buyers Mission, hosted by Food Export, runs 8 a.m. to 4 p.m. and carries its own pre-registration requirement. The association lists it among three buyer meeting programmes, and the other two, Curated Connections and RangeMe Buyer Outreach, run at no charge.
What the Record Leaves Open
The 310 first-time exhibitors stand as a count the association publishes. The show's event platform returned a CAPTCHA on a read of 16 October 2026, so no page read here carries a list of those brands.
No page read for this piece publishes pay, wage or headcount data for the roles listed. The venue feed carries no attendance forecast for the booking.
