A first culinary director at Langley Castle
Langley Castle in Northumberland has appointed Mark Greenaway as its first Culinary Director. General Manager Mohamed Serag said the castle has never had a culinary director at the helm. The hotel describes itself as a four AA star (Silver) property.
What the role covers
Greenaway holds menu direction across Josephine’s, the hotel’s two-AA-Rosette restaurant, along with the Pavilion and the Drawing Room. The hotel states the menus will use seasonal produce from Northumberland and the wider region and will change through the year with ingredient availability.
The programme reaches afternoon teas, Sunday lunches, weddings and special events alongside the restaurant’s tasting and a la carte menus.
The products the kitchen prices
Langley Castle opened to guests in 1986 and marked its 40th anniversary in May 2026. Its own site lists the selling programme by name: room offers and restaurant offers, four stay packages (The Castle Escape, The Intimate Castle Gathering, The Castle Celebration and The Castle Weekend), a wedding showcase on 3 October, and a Christmas programme with wreath making on 28 November, Meet Santa on 13 December, party nights and a New Year’s Eve gala dinner.
Each of those products carries a food line inside its price. A package dinner, an afternoon tea and a wedding menu are the items the new post controls, and the cover count behind them sits in the same booking system as the rooms.
Greenaway’s record
Greenaway opened Mark Greenaway at Picardy Place in Edinburgh in 2011 and moved the restaurant to North Castle Street in 2013. He opened Grazing by Mark Greenaway at The Caledonian in Edinburgh in 2019, has published two cookbooks, Perceptions and Progression, and appeared on Great British Menu.
What the hire signals for a food-led property
The title sits above the kitchen rather than inside it. Greenaway holds menu direction across three venues instead of running one restaurant, and the hotel names him in its public positioning alongside the general manager.
“Under Mark’s direction, food will become a more integral part of our offering to the visiting guest and local diner,” Serag said.
